- 180 g cooked quinoa (roughly 60g dried)
- 100 g dates
- 135 g nut butter (any nut will do)
- 70 g desiccated coconut
- 95 g flax meal (ground flaxseed)
Quinoa has infinite uses and is not just a savoury ingredient. These little balls of energy are a good pick-me-up.
Put all the ingredients in a blender except for 30g of the the flaxmeal.
Take spoonfuls of the mixture and roll them into balls. Then roll the balls in the remaining flax meal.
Refrigerate for an hour to harden before eating.
